This Pulled Pork King Ranch Casserole is a creamy casserole loaded with juicy pulled pork, bell peppers, and flavorful sauce with layers of nacho tortilla chips and cheese. It is the perfect casserole for dinner, game day, and family gatherings.

Directions

Step 1

Preheat oven to 350°F. Coat a 9- x 13-inch baking dish with cooking spray.

Step 2

In a large skillet over medium heat, heat oil. Sauté bell pepper, onion, and garlic for 4 minutes, or until tender.

Step 3

Stir in soup, diced tomatoes, and chili powder. Cook just until warmed.

Step 4

Add half of the crushed chips to the bottom of the baking dish.

Step 5

Sprinkle half pork over chips, top with half the sauce, and half the cheese. Repeat layers.

Step 6

Cover with foil and bake 30 minutes, or until bubbly and hot.

Step 7

Serve with chopped green onions and sour cream.
