Pork Tenderloin and Apples with Garnet Yams

Our Pork Tenderloin and Apples with Garnet Yams is a delicious one-skillet recipe the whole family will enjoy. Seal in the juiciness and flavor of the pork tenderloin with a quick sear, then saute the apples with cinnamon and brown sugar. Pop it in the oven for 20 minutes for a healthy and satisfying meal. Meanwhile, pop the red garnet yams into the microwave for 9 minutes for a succulent, moist side dish. Ready in about 40 minutes, it's a great weeknight dinner.

Directions

Step 1

Preheat oven to 375° F.

Step 2

Season the pork tenderloins with salt and pepper.

Step 3

Melt 1 Tbsp coconut oil in large, oven-proof skillet over medium-high heat.

Step 4

Sear the seasoned pork on all sides for 90 seconds per side. Remove it from the skillet and set aside.

Step 5

In the same skillet, melt 2 Tbsp coconut oil.

Step 6

Add onions and saute for 5 mins. Add apples and saute for another 2 minutes. Add cinnamon and brown sugar. Stir.

Step 7

Deglaze the pan by pouring pumpkin ale in the skillet and scrape the skillet for 1 minute. Remove from heat.

Step 8

Return the seared pork tenderloins to the skillet and bake for 20 minutes or until internal temperature is at least 140° F.

Step 9

While pork tenderloin and apples are baking, prepare red garnet yams: Clean red garnet yams. Pierce with fork. Microwave on medium-high heat for 9 minutes. Remove. Cut potato in half lengthwise. Cut slits in the yam for butter. When ready to serve, top with thin slices of butter and additional cinnamon, brown sugar, and thin sliced basil, as desired.

Step 10

Remove pork tenderloin and apples from oven to let pork tenderloin rest for 5 minutes before serving. Add 4 slices, about 2 tsp of butter over the apples to melt.

Step 11

Slice the pork tenderloin. Serve with apples and onions. Drizzle with skillet sauce.

Cook's Notes

This recipe can be prepared in a slow cooker, if preferred: Season and sear the pork tenderloin as described above. Place in the slow cooker. Toss the sliced apples and onions in brown sugar and 1 Tbsp of coconut oil, add to crockpot. Pour pumpkin ale and butter slices over pork. Cook on HIGH for 2 hrs or LOW for 4 hours or until the internal temperature registers at least 140° F. This recipe calls for coconut oil to make the apples tender and brings out their natural flavor. You may replace with butter or other cooking oil. This recipe calls for LOCAL Thirsty Dog Pumpkin Ale, the malty and spiced ale give this seasonal dish an amazing flavor. If you prefer, you can substitute with apple cider or apple juice.
