Preheat oven to 450° F. Line baking sheets with parchment paper.

Blend butter and sugar together with a hand mixer or stand mixer until light and fluffy, about 3-5 minutes.

Add egg and vanilla and mix until combined.

Mix flour and salt together in another bowl. Gradually add to butter mixture on low speed.

Roll dough into 1″ balls. Create a scoop in the center with a floured rounded spoon.

Step 6

Add your favorite jelly or preserves into the center of the scoop.

Step 7

Bake 5-6 minutes. Cookies are done when jelly starts to bubble.
