Our Olympian Enchilada Bake is inspired by what Olympic athletes eat before competitions. It is packed with lean protein, vegetables, and a healthy carb to power your family through any challenge. Add red pepper rings on top in the shape of the 5 Olympic rings for an extra festive and fun touch. This recipe is easy to prepare, just add all raw ingredients to a casserole dish and let it bake!

Directions

Step 1

Preheat oven to 350° F.

Step 2

Spray a 9x13 inch baking pan with non-stick cooking spray.

Step 3

Add quinoa to the baking dish, spreading evenly to coat the whole bottom of the pan. Next, add diced peppers, black beans, corn, cubed chicken, green chilies, layering one ingredient over another and spreading out evenly.

Step 4

Sprinkle Acme Fresh Market Ancho Chili Fiesta Rub seasoning over chicken.

Step 5

Pour enchilada sauce over contents in baking pan.

Step 6

Cover with foil and bake for 45 minutes. Remove foil and continue baking for another 15 minutes.

Step 7

Sprinkle cheese evenly over the top and additional bell pepper Olympic rings. Bake for another 7-10 minutes, or until cheese is melted and bubbly.

Step 8

Remove from oven and add toppings of choice. including avocados, tomatoes, cilantro, and green onions.
