Mushroom-Smothered Chicken Thighs

Golden brown, super juicy, tender chicken thigh recipe, smothered in a creamy, garlicky, mushroom sauce. This one-skillet chicken thighs recipe is quick and easy for weeknights.

Step 1

Preheat oven to 350°F.

Step 2

Sprinkle chicken with salt and pepper to taste; cook in an oven-safe skillet sprayed with cooking spray and heated over medium-high heat 8 minutes or until golden brown, turning once. Transfer chicken to a plate.

Step 3

Cook mushrooms in same skillet sprayed with cooking spray 5 minutes, stirring frequently.

Step 4

Add almond milk; heat to a boil and cook 2 minutes or until slightly reduced, stirring to scrape browned bits from bottom of skillet.

Step 5

Add sauce and chicken; heat to a simmer, transfer to oven and bake 20 minutes or until internal temperature of chicken reaches 165°F.

Step 6

Garnish with basil, if desired.

Cook's Notes

This recipe calls for Gerber's Amish Farm Chicken Thighs which comes backed with chicken drums. Save the chicken legs for another recipe or use thighs and drums in the recipes. This recipe calls for Shitake Mushrooms, 12 ounces of any mushroom can be used.
