Preheat oven to 350˚F. Spray an 8×8” baking pan with cooking oil spray.
Add French toast bread to a casserole dish.
Whisk together eggs, milk, cinnamon, vanilla extract and brown sugar. Pour over bread and gently press down.
Place cream cheese evenly over bread.
Add strawberries and blueberries over bread. Cover with plastic wrap and refrigerate for 4 hours or overnight.
Preheat oven to 350°F. Place the casserole dish on a baking sheet to catch any drips. Bake for 50-60 minutes, until set in the middle. Let cool for 10 minutes before slicing.
Serve sprinkled with powdered sugar, with maple syrup drizzled over the top.
